To infuse the gin in this celery gimlet place 1 1/2 cups gin into a jar with a lid. Slice half a celery stalk with its leaves into the jar and drop in one dried bay leaf. Infuse for 2 days.
- 1 ½ ounce celery infused gin
- 1 ounce freshly squeezed lime juice
- ¼ ounce simple syrup
- 2 dash celery bitters
- celery leaflet (as garnish)
Combine gin, lime juice, simple syrup and bitters in a cocktail shaker 2/3 filled with medium ice cubes. Shake and strain into a cocktail glass. Garnish with a celery leaflet.
