This fruit-driven Pinot Gris shows a nice floral complexity in addition to the spicy aromas of pear, peach and fig, giving the wine a fairly round mouth feel and substantial body.
The wine has enough oak to compliment the caramelization on the chicken breast and the nuttiness of the Jerusalem artichokes, yet retains plenty of bright crisp acidity that works well with the dish’s saltiness from the green olives and the intensity of the thyme.
