Millionaire’s Bacon from Brewery Gulch Inn is the signature breakfast item of the hotel in Mendocino, CA.
- 12 slice thick cut bacon (the hotel uses Daley’s Honey Cured)
- crushed red pepper flakes (to taste)
- 1 cup light brown sugar
Place the oven rack in the center position then preheat the oven to 375 degrees F.
Line a ½ sheet pan with parchment paper. Lay 12 strips of bacon onto the sheet pan, slightly overlapping each piece. Sprinkle crushed red pepper flakes evenly across the bacon to taste (about ½ teaspoon) followed by the brown sugar. Make sure to cover every bit of the bacon with sugar and press the mixture thoroughly into he bacon, like you’re making ribs.
Bake in the heated oven until just beginning to get crisp, and is well-caramelized and bubbly; about 30 minutes. Rotate the pan the bake about 5 minutes more.
Drain the bacon on a wire rack set over a tray to catch the grease. Serve immediately.
