
Ravines Dry Riesling is light gold in color, this super-crisp New York wine fills your nose with a complex array of citrus and herbal fragrances. Flavors of kaffir lime and green apple hit you immediately-which match the kaffir lime component in Greg’s salmon dish-followed by peach and melon to round the wine out. Yet at only about 12% alcohol, this wine remains light enough not to interfere with the particularly mild flavor of Keta salmon. With bright acid and a clean minerality, I believe Riesling is a natural partner for exotic flavors such as coconut milk and green curry.
Despite the best efforts of sommeliers, chefs and wine writers, Riesling is still criminally under-appreciated in the United States by the general wine-gulping populace. I laugh every time I hear someone say with a sneer, “I don’t drink sweet wines,” as if it was a badge worn only by “true appreciators” of wine. The truth is that Rieslings are arguably the most versatile white wine for pairing with food. With vibrant acidity, complex aromatics, & elegant flavors, I think Riesling’s reputation as the “Queen of Grapes” is well-deserved.
