Minted Blueberry Lemonade

Ingredients

  • 2 cup fresh blueberries
  • 1 cup loosely packed fresh miny leaves (chopped)
  • 1 cup granulated sugar
  • 1 cup fresh squeezed lemon juice
  • 2 cup water
  • lemon wedges (as garnish)

Directions

Combine blueberries, mint, sugar, and lemon juice in a blender or food processor. Pulse the mixture 6 or 8 times then run the machine until the mixture moves freely and becomes very smooth.

Strain the mixture through a fine-mesh sieve into a 1-quart or larger pitcher. Press down on the solids with the back of the spoon to remove as much of the liquid as possible. You should have about 2 cups. Stir in the water and serve over ice. Garnish with lemon wedges.
