Bright, thick and slushy this Mango Cooler is about as much fun as a Sno-Cone. But don’t serve one to the kids!
Look for fragrant mangos with unblemished skin. This recipe makes 2 drinks.
Ingredients
- 1 cup ripe mango chunks, frozen, pluse more for garnish
- 2 ounce dark rum
- 2 tablespoon freshly squeezed lemon juice
- 1 tablespoon simple syrup
- 1½ cup crushed ice
- 1 mint leaf for garnish
Directions
Combine all the ingredients (except garnish) in a blender; process until smooth. Divide and pour the mixture into 2 stemmed glasses, and serve garnished with the mint leaf and reserved mango cubes.
