Shake up your grilling routine with this Grilled Avocado & Prosciutto Open-Faced Sandwich
Ingredients
- 2 slice rustic bread
- oilve oil, as needed
- 2 slice prosciutto, a bit thicker than usual
- 1 avocado (halved, pitted & peeled)
- lime juice, as needed
- salt, to taste
Directions
Prepare the grill for medium-high indirect heat. Brush both sides of each slice of bread with olive oil, and grill, on one side about 30 seconds; flip and repeat. Remove from grill and set each slice on a serving plate.
Grill the whole prosciutto slices until crisp and well colored, about 2 minutes per side. Lay one slice on top of each piece of bread.
Brush the avocado halves (pitted and peeled) with fresh lime juice and olive oil. Grill, cut side down, for 1 to 2 minutes, creating grill marks. Turn to create crosshatch marks, and grill for 1 to 2 minutes more. Top bread and prosciutto with the grilled avocado. Sprinkle with sal

We have making salmon down to an art, but nothing to top it and this might just be the Christmas trick. Merry Christmas to you, although I know it’s not quite your last post. You have more up your sleeve.
I never know what to say for the subject. Argh. Anywho, love your “light” salmon and pepita recipe. It’s getting closer to that time where we’ll all have to lighten up our eating habits to lose all that cookie and brownie weight from this month. :-p Lovely colors and textures.
That’s an unusual pesto for me, but you know I’m not very adventurous. Do you think it would pair well with beef?
