
This is gluten free, but don’t let that stop you from making it because it’s also delicious!

Ingredients
- 2½ cup blanched almonds
- 1½ cup sugar
- 3 large naval oranges
- 6 large eggs
- 1 pinch salt
- 1½ teaspoon baking powder
- 1½ teaspoon almond extract
- powdered sugar for tipping
Directions
PRE-HEAT OVEN TO 375
1. GREASE AND FLOUR 10 INCH SPRING FORM CAKE PAN
2. IN FOOD PROCESSOR GRIND TOGETHER ALMONDS AND SUGAR UNTIL THE ALMONDS ARE STILL A BIT CRUNCHY
3. BOIL THE THREE ORANGES WHOLE FOR 30 MINUTES THEN LET COOL AND QUARTER
REMOVE SKIN FROM FLESH AND PUREE COMPLETELY INCLUDING SKIN IN FOOD PROCESSOR
4. BEAT THE EGGS UNTIL THEY ARE FLUFFY AND LIGHT IN COLOR
5. ADD THE SALT, BAKING POWDER AND ALMOND EXTRACT TO THE ALMOND/SUGAR MIXTURE THEN FOLD THE PUREED ORANGE MIXTURE THEN FOLD THE EGGS INTO IT
6. POUR ENTIRE MIXTURE INTO THE SPRING FORM PAN
9. BAKE ONE HOUR
10. LET COOL THEN SPRINKLE WITH POWDERED SUGAR
