Serves 4
1 cup fresh cranberries
1/2 cup orange juice
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1 teaspoon minced garlic
1 or 2 jalapeno peppers, seeded and minced
zest of 2 limes
1/4 cup fresh limejuice
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
3–4 teaspoons sugar (optional)
1/2 teaspoon salt
plus…a touch of honey
1. Rinse and drain the cranberries, discarding any bruised ones. Place the cranberries in a food processor; pulse 3–4 times until chopped; transfer to a mixing bowl. Then combine them with the orange juice, onion, cilantro, garlic, jalapeno, lime zest, limejuice, ginger, cardamom.
2. Salt to taste and add sugar in necessary.
3. Stir together, taste and add a touch of honey, chill 2 hours before serving.
