Domaine Vigneau Chevreau Vouvray Cuvee Silex

Bright golden in color with aromas of lemon peel, honeydew melon, and wet stone. With ripe citrus and candied pineapple flavors, this 100% Chenin Blanc wine almost feels off-dry, yet pronounced acidity and bright minerality remind you that this is dry wine. The wine’s luscious mouthfeel mimics the fruity notes in the abalone’s glaze while keeping the dish’s spiciness in check; yet there is a slight saltiness in the wine that brings out the briny mineral flavors in the grilled abalone.

Extremely food-friendly, wines from Vouvray (located in France’s Loire Valley near Tours), are known for white still wines and sparkling wines made from 100% Chenin Blanc. Dryness is measured by the following terms: sec (dry); demi-sec (medium dry); moelleux (sweet); and doux (very sweet). However, this does not take into account high levels of acidity which counter sugar levels and make the wines seem drier than they are. High quality wines from this region can age very well, becoming quite complex with notes of honey, nuts, ginger and figs. GRANT
