Serve this cucumber salad very cold and its best qualities will shine through.
serves 4
Ingredients
- 2 large cucumbers, sliced on a slight diagonal, in ¼ inch slices
- 1 large red onion, peeled and thinly sliced
- salt and pepper
- 1 teaspoon sugar
- ¼ cup red wine vinegar
- ¼ cup loosely packed fresh dill, thick stems removed
Directions
Prepare an ice bath in a medium sized bowl. Place the cucumber and red onion slices into the icy water and let sit about 15 minutes to get good and cold.
Drain the water and toss the cucumber and onion slices onto a paper towel lined baking sheet and top with a few more layers of paper towels. Press gently to absorb as much water as possible. Transfer the slices to a serving bowl.
Season the cucumber and red onion slices with salt and pepper to taste. Sprinkle on the sugar and the red wine vinegar. Toss the vegetables well, and transfer the bowl, covered to the refrigerator to get very cold. At least 30 minutes.
Just before serving scatter the dill over the top.

I’m so sorry, I totally missed this post, the month of August was just so crazy, especially on weekends! I love your pairing of dragon fruit with ginger and mint, very nice! I think the red dragon fruit is supposed to be sweeter than the white one I had, I hope I can find the red one sometime to try too.

My parents live north of Kona on Hawaii’s big island. They can get gems like this at their local farmer’s market! Can you imagine the luxury?! I am so sorry to hear about your jaw! I have missed reading your blog!! The dragonfruit looks amazing!! I always thought it tasted like a cross between a ripe strawberry and kiwi. To answer your question, yes we are now in California! I’ve missed so much but this is a great post to get re-started! In the Twin Cities I have only seen dragon fruit in its dried form (I may not be looking hard enough) and it’s nowhere near as lovely as the fresh specimen you have here.
We’re hoping to be in the Philippines for Christmas again this year, even before we visit CA, so that may be where I get my first taste of fresh dragonfruit.
I’ve heard of dragon fruit before. I recently saw it featured on a Philippine news show. I’d be a little intimidated to handle or even eat one. It’s got a nice deep color though. Nice job on the salad.
