WINE: Nino Franco "Rustico" Prosecco di Valdobbiadene

FOOD: Sweet Pea Ravioli with Rosemary Cream

Opening with aromas of white peach, citrus and apple, this light-bodied Italian sparkler has a creamy carbonated mouth feel. With lively acidity and a cleansing effervescence, it cuts through the ravioli's cream sauce perfectly.

Although this is a dry wine, notes of sweet spices and pear on the palate compliment the delicate sweetness of the pasta's pea filling, and the wine's subtle toastiness holds up to the dish's full flavors of rosemary and garlic.

This is a well-balanced wine, with the slight yeastiness of Champagne. A long, yet clean finish makes this a great food wine. But it also works well as an aperitif. At only about 11% alcohol, you needn't worry about opening that second bottle.


Prosecco is made from the indigenous grape, also called prosecco, grown in Italy's Veneto region. Prosecco is mostly made in a dry to slightly off-dry style, but some are sweet.
 
Because of the wines casual feel, I like to serve Prosecco in a traditional white wine glass.
