Za’atar is the Arabic word for the spice we call thyme. It’s also been come to be the word for a specific spice mix made with the herb, roasted sesame seeds and the ground tangy red berries of the sumac tree. In the Middle-East it’s eaten with pretty much every meal – sprinkled on dishes as a garnish, or mixed with olive oil to make a paste. My version stretches the traditional three ingredients to include Middle-Eastern food friendly flavors like anise and cinnamon.

Ingredients

  • ½ cup dried thyme
  • ½ cup toasted unhulled sesame seeds
  • ¼ cup ground sumac
  • 2 tablespoon dried marjoram
  • 2 teaspoon kosher salt
  • 1 teaspoon ground anise
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cumin

Directions

Stir all ingredients together. Seal and store up to 3 months.
