Bright yellow-green with aromas of lime, pear, and wet gravel. The palate features lime zest, pear, and flinty minerals. Though very dry, this wine has plenty of richness to pair with the buttery texture of roasted halibut. The wine also has a nice earthiness, which matches the lentils very well. A subtle herby, minty finish also ties in with the dish’s herbal flavors.

Situated halfway between Dijon and Paris, Chablis is a sub-region of Burgundy, France. Chablis makes one type of wine: chardonnay. Cool temperatures and crusty limestone soils produce a bone-dry, steely, yet rich wine style, which cannot be easily duplicated in other regions.
