domaine carneros brutWith a beautiful pale pink color, this California sparkling rosé has delightful aromas of strawberries, peaches and fresh roses. The palate boasts cherries and strawberries up front, with a nice creamy richness behind the fruit. This creaminess emulates the “fresh milk” flavors in Greg’s burrata dish, the bright red fruit flavors of the rosé are friendly with the tart fruitiness of the persimmon and pomegranate, and the fine bubbles ofter a nice textural contrast to the soft cheese. Nothing says the holidays are here like a great sparkling wine, and I find rosés to be especially festive.

In my opinion, sparkling wine deserves more attention as a food wine than many people pay it. Some of the culinary themes with which bubbly wines pair so beautifully include: spicy, crispy, salty, tart, creamy, and toasty, to name a few. In addition, sparkling wine is my “go to” for foods that are particularly difficult to match with other wines. One of the most memorable experiences I had while a culinary student in New York City, was the opportunity to participate in an “all Champagne” wine dinner, where each course was paired with one of that region’s sparkling wines.
