This crisp white wine from Austria exemplifies why Grüner Veltliners pair well with most salads. In general, “Gru-Vee’s” high acid content is friendly to the sharpness found in most vinaigrette dressings, and they often possess an herbal quality that complements salad greens. In particular, this wine’s white pepper element, a hallmark characteristic of most Grüner Veltliners, pairs perfectly with the peppery bite of watercress and the piquant mustard dressing in Greg’s salmon and avocado salad. This medium-bodied wine is great with salmon, and the tart fruit flavors cut right through the avocado’s fatty mouthfeel.

Grüner Veltliner seems to fall in and out of favor with sommeliers and wine geeks. I’m not sure where it stands at the moment, but it doesn’t really matter! Gruner Veltliner continues to be perhaps the most versatile white wine.  Loaded with intense fruit, spiciness, and minerality, GV is at home with everything from light salads to seafood, to roasted veal and sausages. Most are usually drunk young, although the best ones have tremendous aging potential. Although Grüner is cultivated all over Austria, wines from the sub-regions of Wachau, Kamptal and Kremstal are your best bets. GRANT
