Tenuta “Sarno 1860” Fiano di Avellino: Brilliant gold in the glass, with medium body. Quite a powerful intensity on the nose: aromas of grapefruit, stone fruit and white floral mingle with chalky, flinty earth and white pepper spice notes. The palate is rewarded with a sensation that is both fruit-forward and dry. Flavors of mandarin orange, pears and Honeycrisp apple are balanced by the tart acidity long appreciated in this central area of southern Italy. (Fun Fact: Avellino is where Tony Soprano’s people were from.)

We’re talking centuries. Fiano is thought to be the grape the Romans, and even further back, the Greeks, used in making Apianum – a word that is permitted on modern day DOCG Fiano di Avellino labels. This rare, thick-skinned grape’s low yields helps concentrate the sugars and flavors in the resulting wine. The Sarno 1860 is “an artistic expression of the earth” according to its back label. The winemaker’s artistry has added a lovely leesy, biscuity characteristic to compliment the terroir’s flinty volcanic soil.

The balance of ripe fruit, spice and a slightly smoky quality pairs well with Greg’s recipe. The figs harmonize with the veritable fruit salad flavors in the wine, the goat cheese is a bridge to the tart acidity and the speck is enhanced by the smoky, almost salty highlights found in this wine.
