Kumquat & Lillet Gelée

Ingredients:

  • 2 (1/4-ounce) envelopes unflavored gelatin
  • 0 red and yellow food dye
  • 0.25 cup fresh squeezed orange or kumquat juice
  • 0.25 c lillet blanc
  • 0.5 prosecco
  • 0.75 kumquacello (you could substitue limoncello or any orange liqueur)
  • 0.5 c sparkling water
  • 0.25 c sugar
  • 4 hin orange or kumquat slices, for garnish
  • 0 fresh mint sprigs, for garnish

Directions

1. Sprinkle gelatin over the cold orange in a small bowl. Add 1 drop each of red and yellow food dye. Let this mixture stand about 5 minutes. Then whisk the ingredients to dissolve the gelatin as much as possible. 2. Add the Lillet, Prosecco, kumquacello, sparkling water, and sugar to a microwave safe bowl. Heat on high for 3 minutes, until almost to a boiling point. Remove the bowl carefully and whisk the mixture well, until sugar dissolves. Pour this over the softened gelatin, and whisk until gelatin dissolves. 3. Pour mixture into an 8-inch square baking dish, or individual sized clear glass bowls. Refrigerate until set, at least 3 hours . Cut into 4 portions if you like, and garnish with fruit slices and mint.

Grilled Peaches with Bellini Zabaglione

Grilled Peaches with Bellini Zabaglione

Ingredients:

  • 5 large egg yolks
  • 0.25 c plus 1 tbsp sugar
  • 0.25 c honey
  • 0.333333 c prosecco
  • 2 T peach juice or nectar
  • 2 freestone peaches, halved and pitted
  • 2 T unsalted butter, melted

Directions

Heat grill or grill pan. Prepare an ice bath; set aside. Make the zabaglione: Combine yolks,1/4 sugar, honey, Prosecco, and peach juice in a large metal or heat proof glass bowl. Set the bowl over a large pan of simmering water. Whisk constantly until the mixture is very frothy, thick and has expanded in volume, about 10 minutes. Place bowl in ice bath; let cool completely. Place cream in a large bowl, and beat until stiff peaks form. Fold whipped cream into egg-yolk mixture. Cover with plastic wrap, and place in refrigerator at least 20 minutes. Line grill or pan with heavy-duty foil. Brush peaches with butter; sprinkle with the remaining 1 tbsp sugar. Grill cut side down until peaches are tender and sugar is caramelized, 6 to 7 minutes. Divide sabayon among four dishes, and top each with a peach half. Serve.

fresh summer peachesI don't know how to break this to Georgia, the supposed peach tree state. And to my friends in Bedford, NY that think New York peaches are 'all that'. They are going to be devastated.

But California ranks first in the U.S. in the production of peaches, producing 71% of the total U.S. crop. We produce nearly 100% of the peaches destined for the can, and an impressive 50% of the fresh market peaches. These facts are facts. And from these facts we can deduce that California must grow some pretty damn good peaches. Case closed.

Peaches are at the very height of perfection right now in California, so I ran down the hill to the Hollywood Farmers Market and picked a peck of them for this week's Market Matters post.

kumquat geleeMy Kumquacello is done. Fini. Terminé. Complet.

We had another tasting and again it did not fare well with my friends. I served it at the end of a small dinner party and I was the only person who liked it just as it was. 

It might suffer from the ugly child syndrome. Maybe I am like one of those parents who show you a picture of their still puckered up infant, or their gangly teen-ager and say 'isn't he adorable?"

"Yeah, a real heartbreaker", is always my safe answer.

Well maybe my kumquacello is some version of a "heartbreakingly" endearing offspring. Of course I love it, because I just spent 8 weeks making it! But it seems nobody else can embrace its charms.

But honestly. I think it's delicious. I really do. So we will never really know the answer. It's probably my stunningly sophisticated palate. It gets me every time...

But, you should have heard some of the remarks. Mostly non-committal. But I am not stupid. I can read between the lines. Even though people's "suggestions" about what I could do with my kumquacello made me mad, they did get me thinking.
