I’ve never seen carrots any color other than orange, even on trips to the farmers market. The salad looks great, especially with the goat cheese and avocado.

I grow these same multi -hued carrots in my garden and I have been challenged for a way to prepare them- Raw they look lovely, but are a bit sharp/bitter in flavor and boiled they lose all their color. I’ve even tried roasting them with other veggies, but that still left me wanting something that really shows my hard gardening work . Roasted alone and then turned into your salad was the perfect solution. I made it last night and it was delicious- Thanks again for the great inspiration!

Greg – This is a recipe I am definitely saving for when my local farmer’s markets are back in swing this Summer. It’s a real beauty,especially when you make it with a variety of different carrots….YUM!

No I mean me! I want to reach into the screen and take that plate. I still giggle when I hear Piggly Wiggly, only one left in the area I grew up in, Denton, Tx. I am sure there are more, but those bring thoughts of the good ole days and only one color when I was young. Took me years to give into cooked carrots, but love’em now!

I love roasted carrots and this salad sounds absolutely amazing. So refreshing. They looked great on their own, but with avocado – wow!
Wonderful combination of carrots, avocado, and goat cheese in this salad! My daughter would love this as she recently can’t get enough of roasted carrots!

I want. I want now. Even though it’s bedtime here and I’m not really hungry as such, I could imagine devouring a big plateful of this, especially when accompanied by the wine you suggest – I just love me a nice chilled glass of Matua.
I made this and wow, was it amazing! The combinations were great together, even though I didn’t have heirloom carrots and I changed a few things. Loved it-thanks!
