Tea towels may look nice, & you'll find them in front of the camera at Sippity Sup. But behind the scenes, I prefer the street smarts of a "rag" like this. The culinarily astute will recognize the iconic green check as the side-towel formerly available only to Culinary Instutute of America students. You will find mine tucked into the front of my apron, loincloth style. From small spills to blazing hot handles this "rag" is my partner. Then into the wash, where it comes out ready for another hard day's work. If only the same could be said for me!

These towels were developed at the Culinary Institute of America to work hard and make no apologies. They are large enough to grab a hot stockpot by both handles using just one towel. They are absorbent enough to mop up messes. They will change the way you work in the kitchen.
It used to be that you had to have been a student at the CIA to have a set, or even know about them. Because for many years that's how the great cooks were introduced to them, as part of their new student package of goodies. But now you know all about them.
