Black Diamond Finishing SaltI'll be honest, finishing salt is not a necessity in my life. Don't get me wrong I am a fantaic about good salt. I certainly believe in the proper seasoning of food. But to me proper seasoning almost always means that I salt the food as I cook. This builds flavor and is the right way to do things.

But finishing salt can be a bit like that perfect strand of pearls setting off a shapely little black dress. Because I know the food you make is delicious. I know you care about the presentation. I think this salt does all of this and more. It shows a level of sophistication worthy of your attention. Because like jewelry finishing salts require an artful eye. That's why I like this beautiful black flake salt from The Meadow. This salt is harvested in Cyprus. The structure is complex, the black color is exotic. It can be the perfect finishing touch.

I chose the Black Diamond Finishing Salt because of it's dramtaic color. But it also has one of the largest flakes I have ever seen. Adding it as a final flourish makes a bold statement on any plate. The color comes from activated charcoal which adds an organic quality to the flavor. I suggest you use it on salads, potatoes and pastas. It adds an earthy depth to pork as well. If you want to get creative try a few flakes adorning a slice of pumpkin pie. Talk about getting noticed!
