This Angeline Sonoma-Mendocino Counties Pinot Noir is a deep ruby color with delicate aromas of black cherries, raspberries, and rose water.  Right behind the flavors of ripe, red fruits lie the more interesting elements of sage, mineral and rose petals.  It’s acidity carries the wine through the silky texture of Greg’s salmon, while the wine’s subtle nuances of vanilla oak pair nicely with the salmon’s cinnamon flavoring. Without harsh tannins, this Pinot Noir works well with the heat from the smokey spiciness of the chili powder on the fish.
Pinot Noir is a cook’s best friend.  With both red wine and white wine characteristics, it is incredibly flexible with a variety of ingredients and preparations.  Adding to its allure (and price) Pinot Noir is considered a “difficult” grape to grow and make into wine.  France’s Burgundy region is home to the most legendary expressions of the varietal, but world-class Pinot Noir is also being made in parts of California, Oregon and New Zealand.
