FOOD: Grilled Tuna with a Savory Mint Sauce

This white wine from Bordeaux, France is a blend of equal parts Sauvignon Blanc and Semillon, with a splash of Muscadelle.  Aromas of citrus, pear, and herbs jump out of the glass, preparing your palate for the intense flavors of lime, grapefruit and fresh herbs.  This wine is more complex and fuller-bodied than most new world style Sauvignon Blancs, with an earthiness and slightly waxy mouth-feel, so it holds up to the oily texture and richness of tuna.  The Sauvignon Blanc component, however, pairs naturally with the mint sauce and peas.

This is a medium-bodied, dry wine with plenty of acidity.  The finish is fruity, clean but long, with a touch of smokiness.

Although Entre-Deux-Mers literally translates to "between two seas," here it refers to the region between two rivers:  the Dordogne and the Garonne.  While wines from this region are not as highly regarded as those from the nearby Graves sub-region--particularly those from Pessac-Leognan-they offer an excellent quality-price ratio.
